Summarising meeting notes or long documents your team already produces.
A searchable Q&A bot over your team's own internal documentation.
A triage or classification tool for whatever repetitive manual task your team already complains about.

What makes this a stronger portfolio piece than a toy demo

Real users mean real, sometimes uncomfortable feedback — 'this is slower than doing it manually', 'this misses context I care about' — and responding to that feedback is exactly the skill a recruiter is trying to assess when they ask about your projects.
